Today it's a great day! I woke up with a huge desire to cook something new, for us, but also for you.
I'm so happy to get back to my kitchen, it has not been easy with my pregnancy. I was not feeling like cooking. All disgusted me. It's really difficult to cook and feel inspired that way.
Searching on my fridge I found some triggerfish fillets (this a rare kind of fish found on the Azorean waters, really hugly and sticky form outside, but delicious to cook and soft inside) , so I decide to create a dish to combine all the flavours, merging a bit of the azorean gastronomy with a glimpse of oriental food but keeping it clean, healthy and easy.
So I had the fish, a lot of sweet potatoes resting on my pantry and off course, veggies, there is no meal without vegetables !Not possible.
I think the best is to split in 3 posts, so this won't be too long. Also I wnat you to stop by during the week to get the others recipes :)
First Recipe, we will focus on the veggies, why? Just because!!
I used:
Recipe for two.
- 1 large carrot
- 1 medium red bell pepper
- 3 leaves of kale
- Fresh ginger
- 1 tsp olive oil
- 2 Christmas bell hot pepper (be careful)
- Sriracha
- Sea salt
- Black pepper
- 1 tsp honey
- 1 tsp tamari sauce
- Sunflower seeds
Directions:
Chop all vegetables in juliennes. In a non-stick skillet with olive oil to heat, add the carrot and let it cook for a few minutes. Then add the pepper , kale, fresh ginger and hot peppers. Season it with sea salt, pepper and let all the flavors combine. Finally add the sriracha, honey and tamari sauce. Give it a few minutes more, remove from the heat, adding the sunflower seeds and serve!

Hoy en día es un gran día! Me desperté con ganas de cocinar algo nuevo, para nosotros, y para ustedes también.
Estoy tan feliz de volver a mi cocina, no ha sido fácil con mi embarazo. No me sentía con ganas de cocinar. Todo me daba asco, mi inspiración estaba en blanco. Realmente no es posible crear algo sin desearlo.
Buscando en mi nevera me encontré con algunos filetes de "peixe porco"o ballesta (un pez muy dificil de encontrar, bastante feo y pegajoso por fuera, pero delicioso para cocinar) , así que decidí crear un plato con sabores osados y fusionando un poco la gastronomía azoreana con la oriental. Como siempre saludable y fácil.
Así que ya tenía la proteína con el pescado; los carbos con mis queridas batatas que nunca me faltan en la despensa y por supuesto, las verduras, no hay comida sin vegetales en mi casa! No es posible.
Comenzaremos con las verduras y dividiré en 3 este almuerzo para que no se extienda mucho y también pata que no me olviden y se pasen por aquí durante la semana.
